Some bars have advantages over others, it all depends on the tricks you are doing.

For example, for tricks where you put your leg over the bars, the lower the cross bar is the easier it will be.

The other main aspect, the width of the bars at the stem area - check out this video of York Uno and see how the Ares AY FLT bar works in his advantage:

and i would say bar selection def. helps. i wouldnt put roseanne bars (9.5 tall 31 wide) on my flat bike. ive had them on my street bike before, hot damn, when you cut them down they are nice. (with all that rise, it felt like i was cheating manuals  ;D )

but i have some swiss misses on my current build (should hopefully be done this weekend!), and i also had some swiss misses on my old paris 3 bike. i like those bars, plus 75 bones for a bar and stem thats not used or in a weird ass size is a steal!

I think it may be more of a comfort thing then a trend.
Most 2 piece street bars have more sweep then your average flatland specific bars.
Having a bit more sweep puts your wrists in a more natural position. Less sweep, and more people tend to complain about wrist discomfort.
Both have their advantages and disadvantages...just go with whats comfortable for YOU and forget what everyone else is doing. ;)

When it comes to sweep, a lot of people start saying that more sweep feels better on the wrists.

That is true but... that only actually applies when you are "riding" your bike or in a trick where you have both hands on the handlebar (manual, nose-wheelie, hang-5, whiplashes).

In all other tricks where you grab the bars with only 1 hand it does nothing and if you do front wheel switches the negative sweep when the bars are turned is very uncomfortable.

So you have to look at sweep from the "angle" of the tricks you do...
