Yep, you can lube up sealed bearings. You just pop the little seal cover off and put the lube on the exposed bearings.
Basically, the heavier the lube, the longer lasting the effect it will have on the bearings. The downside is that the heavier lube will make the bearings roll slower. A light oil will make the bearings run faster, but I've heard road bikers say they need to add oil before every ride because it's so thin.
Personally, I've never had a need to lube up sealed bearings.
